i made whoopie pies!
once i saw this post by Crystal (<3), i decided i was going to make
pumpkin whoopie pies with cream cheese icing.
sorry. i didn’t. i advertised it on facebook,
and chocolate was the overwhelming preference.
oh well. i’ll do pumpkin next time!
so i turned to my ever-reliable friend: Food Blog Search.
seriously, have you used this website before?
it’s insanely handy. handier than google for looking up recipes, anyway.
in fact, i’m using it to look up recipes for smoked salmon quiche right now.
mmhmm.
so back to whoopie pies!
this was my first time making them, ever.
this was also my first time EATING them, ever.
i did not know they would be this big! seriously!
so here is the recipe that i used:
Whoopie Pies!
recipe from Not Quite Nigella
Time: 1 hour
FOR THE CAKES:
- 1/4 pound/1 stick/125grams butter, at room temperature
- 1 cup light brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/4 teaspoons baking soda
- 1/2 teaspoon sea salt
- 2 cups all-purpose flour
- 1/2 cup cocoa
- 1/3 cup small chocolate chips or flakes
- 1 cup buttermilk (1 cup milk + 1 tbsp lemon juice or white vinegar)
FOR THE MARSHMALLOW FILLING:
- 125grams of marshmallows
- 2 teaspoons of water
CAKE
- Preheat your oven to 350F/160C.
- Cream together the butter and sugar. Beat in the egg and vanilla. Set aside.
- Prepare your buttermilk: if you don’t have ready-made, then use 1 cup of milk + 1 tbsp of lemon juice or white vinegar. This makes about 1 cup of buttermilk.
- In a separate bowl, combine the flour, salt, baking soda, and cocoa powder.
- Add the dry ingredients to the butter mixture in three parts, alternating with buttermilk.
- Stir in the chocolate chips.
- Using an ice cream scoop or spoon, form the cookies/cakes on parchment paper on a sheet pan. The form of the cakes is very important because it will bake up to be that way! The cakes will spring up a lot, so remember to leave at least 3-4 inches between them. Formation of the cakes will be much like forming drop cookies, but the texture of the finished cakes will be like slightly fudgey… cake.
- Bake for 12 minutes, or until the cakes spring back when touched. Leave them to cool – they’re really delicate! Feel free to make an odd number on purpose so you have the excuse to eat one with a cold glass of milk while it’s still hot.
FILLING
- Melt the marshmallows in a bowl 20 second bursts. Add a splash of water (just a little, about 2 tsps) and melt until at a nice, spreadable consistency. (I find that I had too much filling when I used just 100g of marshmallows – so melt just what you need because you can always make more filling.)
- Spread the filling on one half of a whoopie pie (remember to pair them up in similar sized halves beforehand!) and wait for a while for it to set before sandwiching. This way it won’t slide around as much while it’s setting.
- Pop it in the fridge once they’re reasonably solid. I wrapped them individually in plastic wrap and transported them that way.

What to make with pumpkin…hmmm, I don’t know. Here’s some ideas: Pumpkin bread/muffins, or maybe Pumpkin swiss roll with cream cheese filling? Or pumpkin cheesecake? Or pumpkin pancakes?

I don’t really like whoopie pies, because I’m not a fan of the icing int he middle, or the texture of the cake…but I think they have a very cute name, and look adorable. I LOVE NQN though! She has the most wonderful blog!
Ah, that’s right, you’re not a desserts person… but still, they are cute, no? I think they look like rustic macarons. I don’t follow NQN but I often come across her recipes… maybe I’ll start reading for real now :D
